Skimmed Milk

May 6th 7° 58' 3 leaves red Paper Heads very small drops on discs

N. B the drying of glands only occur after long &. —

8° 7' trace of curdling

8 10' clearly curdled — small drops

2° 20' — 6° I now feel certain that numerous curds dissolved on one leaf —

5° 30' I am doubtful whether a trace remain

May 7th 8° I can see no curds on one leaf & only traces on the 2 others

8th ie after a day 8° 30' all 3 leaves expanded — I think some curds on 2 of them mere traces — Decided curds on the 3d leaf

I then carefully scraped the secretion off all 3 leaves — & noticed flocculant matter was still visible in the aggregated little masses of secretion. These under compound seem to me

{I am inclined to think only oil globules left with— some [illeg] [illeg] — though looking white. Hence I conclude that fresh casein is all dissolved.

Look at fresh milk.

Look for oil globules — as soon as begin to open — perhaps add little water

compared with coagulated acetic skimmed milk — all fine flocculant matter disappear — globule longer from Drosera — less regular & more opake. —
